Experience the rich and hearty flavors of Tuscany with this Slow Cooker Tuscan Chicken. Tender chicken breasts, seasoned with minced garlic, Italian seasoning, salt, and pepper, are complemented by the savory notes of jarred sundried tomatoes. Enhance the dish with the vibrant addition of fresh or frozen spinach. To elevate the creaminess, generously ladle high-protein alfredo sauce over the succulent chicken. INGREDIENTS

  • 3 lbs chicken breasts, about 4

  • 2 cloves minced garlic

  • 1 tsp Italian seasoning

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/4 cup jarred sundried tomatoes (in olive oil)

  • 2-3 cups fresh or frozen spinach

  • High protein alfredo sauce

    • 1 c unsw almond milk (cashew or coconut works too)

    • 1-16 oz low-fat cottage cheese

    • 1 tsp cornstarch

    • 1/2 tsp each salt+pepper

    • 1/2 tsp Italian seasoning

    • 1/2 tsp garlic powder

    • 1/2 c grated parmesan cheese

      STEPS

  1. First, put all ingredients for the Alfredo sauce in a blender or food processor and blend until smooth.

  2. Meanwhile, place chicken in the slow cooker. Top with Alfredo, garlic, and Sun-dried tomatoes.

  3. Cover and cook on low 4-5 hrs or high for 3 hours.

  4. Once chicken is cooked, add spinach and cover to wilt down. You can shred the chicken and put back in sauce or serve chicken breast whole. I usually put on warm so it’s ready to eat for whoever whenever if it’s an evening where we’re eating at diff times.

Notes: If wanting a carb/starch, serve over cauli gnocchi, desired pasta, or rice. For more veggies/fiber/no starch serve over hearts of palm pasta, spaghetti squash, or even with veggies or over a salad.
