Experience the delightful combination of flavors in this Crunchy Dill Chicken Salad. Begin by chopping 3 pounds of cooked chicken (consider using a pulled rotisserie from Costco for added convenience). Add diced celery, a half cucumber chopped small, and finely chopped sugar snap peas from an 8-ounce bag. Incorporate a shallot, finely chopped, along with 1/4 cup of freshly chopped dill.

Squeeze the juice of a lemon over the mixture and season with 1/4 teaspoon each of onion powder, garlic powder, salt, and pepper. Enhance the dressing with 1 tablespoon of Dijon or spicy brown mustard, 1/3 cup of white wine vinegar, and 1/2 cup of nonfat Greek yogurt. Toss everything together for a refreshing and crunchy chicken salad experience.


INGREDIENTS

  • 3 lbs cooked chicken, chopped (I used the Costco pulled rotisserie)

  • 4-5 oz celery, diced small

  • 1/2 cucumber, diced small

  • 8 oz bag sugar snap peas, chopped

  • 1 shallot, chopped thin

  • 1/4 c fresh dill, chopped

  • 1 lemon, juiced

  • 1/4 tsp onion powder

  • 1/4 tsp garlic powder

  • 1/2 tsp each salt & pepper

  • 1 T Dijon or spicy brown mustard

  • 1/3 c white wine vinegar

  • 1/2 c nonfat Greek yogurt

STEPS

  1. Chop all veggies and add ingredients to a large bowl and stir well. Good in the fridge for a week. Makes 13 cups.

Notes: Serving size is 1-2 cups depending on hunger/fullness cues. I usually have 1-1 /2 cup with crackers or chips that have fat for the balance or even peanut butter and an apple for dessert. To add carb/starch and fat. Or have on a potato for a carb/starch. So many yummy options
