This Sweet Potato Pie Smoothie is fall heaven in a bowl and I savored every bite. And it gives your gut a great dose of resistant starch too! This one is like a hug in healthy comfort food form. It’s full of protein, healthy fat, & fiber. And gets you some veggies and nutrient-dense foods in incase they don’t happen again later today.

Savor the flavors of fall with the Sweet Potato Pie Smoothie. In a blender, combine 1 cup of your choice of milk (unsweetened almond works well) with 1 tablespoon of ground flaxseed for added fiber and omega-3s. Add a nutty richness with 1 tablespoon of almond or pecan butter. Boost the protein content with 1 serving of vanilla protein and an additional serving of collagen (or 10g more protein powder). Enhance the aroma and taste with 1/2 teaspoon each of vanilla or maple extract, cinnamon, and nutmeg. Introduce a pinch of pink salt for balance.

For a creamy texture, include 1 cup of ice. For the sweet potato essence, add one fist-sized baked sweet potato (refrigerated, with ends cut off, and skin on for extra fiber). If you're feeling adventurous, throw in 1/2 of a yellow squash or some riced cauliflower (optional). Blend until smooth, and enjoy the comforting taste of a Sweet Potato Pie in a glass!

  • 1 serving collagen (or 10g more protein powder)

  • 1/2 tsp vanilla or maple extract

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp pink salt

  • 1 c ice

  • 1 (fist size) sweet potato, baked and refrigerated ends cut off, skin on for fiber (frozen cubed works too)

  • 1/2 yellow squash or riced cauli (optional)

STEPS

  1. Add ingredients in the order listed to the blender and blend well.

  2. Topped mine (optional) with a little sprinkle of unsw coconut, & granola for that vital chewing. And there’s room for more fat IMO bc only 1 T nut butta.
