A delightful and nutritious snack inspired by the classic cookie. these energy bites are perfect for a quick boost of energy and flavor.

The star of this recipe is the coconut cashew butter, but almond butter can also work wonders. To add a touch of protein, we incorporate vanilla or chocolate protein powder, creating a satisfying snack. The mixture comes together with coconut flour, oats (opt for gluten-free if needed), and a dash of vanilla and almond extracts.

To achieve the perfect consistency, we use almond or coconut milk, keeping these energy bites moist and delicious. As a nod to the classic Samoa flavor, dark chocolate chips and toasted unsweetened coconut flakes are the finishing touches. Enjoy these delectable energy bites anytime you need a little pick-me-up with a hint of indulgence!


INGREDIENTS

  • 1 cup coconut cashew butter (almond butter works too)

  • 1/2 cup vanilla or chocolate protein

  • 2/3 cup coconut flour

  • 1/2 cup oats (GF if needed)

  • 1 tsp vanilla extract

  • 1 tsp almond extract

  • 1/2 cup almond or coconut milk

  • 1/2 cup dark chocolate chips

  • 3 T unsw coconut flakes, toasted

STEPS

  1. First, to toast your coconut, heat in a skillet on medium heat. Stirring constantly, it burns quickly so it just takes a few minutes.

  2. Next, combine the ingredients in a bowl, coconut flakes and chocolate chips.

  3. Lastly, stir. You may have to use your hands, I always do. Add a splash of more milk if too dry to form into balls. If a little wet, sprinkle a little more flour. Made 24 1” balls.

    Notes: Two of these are a great snack or fat source in a meal. I love them on top of a smoothie (skip fat source in a smoothie), yogurt & fruit bowl, or a quick meal with some cottage cheese or a liquid protein drink.
