INGREDIENTS

  • 1 - 12 oz jar artichoke hearts, chopped (in water, not oil)

  • 1 - 10 oz bag frozen spinach, mine was frozen but can thaw first

  • 1 c low-fat cottage cheese @goodculture

  • 1/2 c nonfat Greek yogurt

  • 1 c mozzarella, shredded

  • 1/2 tsp each salt & pepper

  • 1 tsp garlic powder

  • 1/2 tsp dried basil

STEPS

  1. Combine all ingredients in a large bowl and stir well.

  2. Pour into a 11x8 glass dish and bake at 400° for 30 min.

  3. Switch to broil for 2-3 min to brown the top. Watch it so it doesn’t burn.

  4. Let it stand for 5-10 min or so before eating. The steam from the spinach has to soak in. Makes 11 - 1/3 c servings.
