INGREDIENTS

  • Wet

    • 1 can chickpeas, rinsed & drained

    • 1/2 c unsw applesauce (kids cup)

    • 1/4 c drippy almond butter (any natural nut butter works, nuts and salt as ingredients)

    • 1 tsp vanilla extract

  • Dry

    • 1/2 c unflavored collagen

    • 1 tsp baking soda

    • dash salt

    • 1/2 tsp cinnamon (skip if not a fan, you can taste it)

    • 1/4 c monk fruit granulated sweetener

    • 1 c oats (GF if needed)

    • 1/4 c dark chocolate chips (or raisins if that’s your jam)

      STEPS

  1. Place chickpeas in a bowl and mash with a potato masher until they aren’t all whole (putting them in the blender or food processor works too).

  2. Add apple sauce and stir, then add all other wet ingredients and stir.

  3. Add all dry ingredients except oats and chocolate chips. Stir and add those last.

  4. Place in a greased or lined muffin tin. Bake 350° 15 minutes. Makes 12.
