    • 1/4 tsp orange extract (or 1 tsp orange zest)

    • 1 cup grated carrots (2 large), used cheese grater

    • 1 cup grated apple (1 large apple)

  • Dry

    • 1 cup vanilla protein powder (whey and beef have both worked great)

    • 1/4 c coconut flour

    • 1 tsp baking powder

    • 1/4 tsp pink salt

    • 2 tsp cinnamon

    • 1/2 tsp ginger

    • 1/2 c raisins

    • 1/2 c unsw coconut flakes

    • 1/2 c chopped pecans or walnuts

STEPS

  1. In a large bowl add wet ingredients and stir well.

  2. Add dry ingredients in the order listed. Stir well.

  3. Bake at 350° for 25-30 minutes. Makes a baker’s dozen.
